Catro is a Neapolitan pizzeria in Riyadh built around one thing: getting a genuinely good pizza into a box and into a customer's hands fast. We are takeaway-first – no dine-in service – which means the whole operation lives or dies on kitchen throughput, order accuracy, and how well we run our delivery channels.
We're looking for a Restaurant Manager who owns the numbers, runs the floor, and holds the standard when the owner isn't there.
WHAT YOU'LL OWN
- Daily operations: open/close, shift scheduling, labor deployment against forecasted demand, and floor presence during peak windows.
- Team: hire, onboard, train, and hold accountable a team of pizzaiolos, prep, and counter staff. Run weekly one-on-ones and monthly performance reviews.
- Delivery channels: manage our Jahez, HungerStation, and Keeta storefronts – menu accuracy, availability, order acceptance times, ratings, and dispute handling.
- Inventory and COGS: weekly stock counts, ingredient-level ordering against par levels, waste logging, and supplier follow-up. Our POS (Rewaa) tracks stock to the gram; you'll keep it accurate.
- Quality and food safety: enforce dough, bake, and boxing standards on every order; maintain full compliance with Baladi (municipality) and SFDA requirements; own hygiene audits and staff certifications.
- Cash and controls: end-of-day reconciliation, variance investigation, and clean POS discipline.
- Reporting: weekly P&L snapshot to the owner covering sales, labor, COGS, and the KPIs below, with actions attached – not just numbers.
HOW YOU'LL BE MEASURED (REVIEWED MONTHLY)
Targets for each will be agreed with you during onboarding, based on the current baseline.
- Food cost % – actual COGS against net sales, with inventory variance held within an agreed tolerance.
- Labor cost % – staffing deployed to match demand without sacrificing peak-hour speed.
- Order accuracy – across walk-in and all three aggregator channels.
- Ticket-to-handoff time – measured during peak windows, not averaged across the day.
- Aggregator performance – ratings, acceptance time, and rejection/cancellation rate on Jahez, HungerStation, and Keeta.
- Inventory variance – theoretical vs. actual, reconciled weekly in Rewaa.
- Food safety compliance – internal audit scores and clean external inspections.
- Team retention and readiness – turnover, and time-to-certification for new hires.
- Cash and POS discipline – daily reconciliation accuracy and unexplained variance.
